Once 18 years have passed, Glenmorangie reunite them to create its warm balance of sweet, floral lushness. The Dalmore 15 year old was first launched in 2007. Matured in Matusalem, Apostoles and Amoroso Sherry casks, it proffers all those winter spice, orange zest and chocolate notes characteristic of Dalmore.

What we have here is a passion project, many years in the making. 8 Wired wanted to put their own beer-inspired mark on their whisky. So instead of making a wash from pale distillers malt, they started with what can best be described as a porter. Dark, chocolatey and malty, fermented with a Belgian saison yeast. After distilling this twice, they aged it in three different barrels: First it spent a year in barrels that held their famed Imperial Stout, Bumaye. Then it went into brand new, heavily charred American Oak barrels for two years. Finally it spent three more years in Bourbon barrels that had also held another Imperial Stout. The finished result is a whisky that is rich and complex. Full of sweet, chocolatey notes from the barley and the stout barrels, layered with complex alcohols, esters and phenols from the fermentation and distilling. This is all rounded off by vanilla, coconut and caramel flavours from the oak.

Classic Cut 2021 is a single malt whisky with a sweet and ginger flavour profile. The liquid has a sweet lightness and deep complexity created through a combination of ex-bourbon, and The Macallan's renowned sherry seasoned American oak casks. The expression reveals flavour notes of gingerbread, fruit jellies and marzipan and provides an ideal platform for a refreshing whisky cocktail.

Every November, the Dalmore whisky makers visit the distilleries historic sandstone warehouses to explore the ageing casks. In the chill shadows, the casks are meticulously assessed and only a handful with distinguishing attributes are hand selected from any one year. Octomore 13.2 offers an alternative maturation to the structural brilliance delivered by its 13.1 counterpart. Following a similar path to the Octomore 13.1, this 13.2 edition is also distilled from 100% Scottish Mainland barley and has been malted to a similar peating level at 137.3PPM. In an indulgent point of difference, the five year old spirit has spent its entire maturing life in Oloroso butts from Fernando de Castilla.
