What we have here is a passion project, many years in the making. 8 Wired wanted to put their own beer-inspired mark on their whisky. So instead of making a wash from pale distillers malt, they started with what can best be described as a porter. Dark, chocolatey and malty, fermented with a Belgian saison yeast. After distilling this twice, they aged it in three different barrels: First it spent a year in barrels that held their famed Imperial Stout, Bumaye. Then it went into brand new, heavily charred American Oak barrels for two years. Finally it spent three more years in Bourbon barrels that had also held another Imperial Stout. The finished result is a whisky that is rich and complex. Full of sweet, chocolatey notes from the barley and the stout barrels, layered with complex alcohols, esters and phenols from the fermentation and distilling. This is all rounded off by vanilla, coconut and caramel flavours from the oak.

Malted rye, rather than the more commonly used unmalted rye, sets this whisky apart from the first sip. Rich and aromatic, it delivers layered notes of spiced custard, ginger, stone fruit, and baked apple pie, followed by a fresh herbal finish that lingers on the palate. Crafted to be savoured in good company and enjoyed however preferred.

This Single Malt Whisky showcases six distinct malts - rather than the traditional one or two - delivering a richer, more expressive flavour with clear regional character. Matured primarily in toasted and charred Australian apera casks, ex-bourbon barrels, and custom 36-month air-dried ex-rye casks, it offers aromas of fresh herbs, shortbread biscuits, raisins, toffee, and dark chocolate. The palate is lush and full, revealing notes of sticky date pudding, amaretto, and espresso.

Established by Hombo Shuzo in 1985, it utilises, cold climate, heavy snowfall, and, soft, granite-filtered water for a slow, nuanced maturation process. Boasting a huge fanbase (and even its own subreddit) it's loved for its light and sweet corn, vanilla, and spice notes. Aged for four years in used or uncharred oak barrels, Mellow Gold is the nostalgic throwback we've all been waiting for.
